Peel and cut the potatoes into about 1/2 sticks. Add the fries to a bowl of cold water so theyre completely covered and let them soak at least 20 minutes.

After drying the potatoes, drizzle one teaspoon of olive oil over the potatoes then gently toss with your hands. If youre making ranch seasoned fries, sprinkle one tablespoon of dry ranch seasoning over the fries, again tossing to coat them.

    How To Cut Potatoes For Fries

    To create fries that crisped but didnt burn, I found that cutting the potatoes into matchsticks that were ¼-inch wide on each side and 3 to 4 inches in length worked best.

    • In order for your fries to cook evenly in the same amount of time, its important for them to be cut the same size.
    • I suggest using a mandoline for easy cutting and to ensure uniform fries.

    The Problem With Frozen French Fries

    In the Before Times , Id do what any normal person did back then, spreading frozen fries on a baking sheet and letting them bake for however long I had until I got too hungry to wait any longer.

    Every once in a while, a unicorn would appear: perfectly golden fries that were tender on the inside and somehow required a cook time I could live with at the moment.

    But more often than not, there were problems.

    Generally speaking, I find the cook time is too darn long when baking frozen fries.

    Also the results are spotty.

    Im a fan of slightly browner and slightly crispier fries, and baking them in the oven always meant a fine balance between being too squishy and too crispy.

    And then, of course, there was the stuck to the pan factor.
