The thing I love most about using an air fryer , is how much you can cut back on the grease! Typically any food that is fried is drenched in oil. For parmesan zucchini in an air fryer though, you only need 1 teaspoon of olive oil and thats only to get your seasoning to stick.

While air fryer parmesan zucchini chips are delicious all on their own, I love serving them up with my favorite honey sriracha sauce. This sauce is super quick and easy to make you wont regret it!

  • Start by preheating your air fryer to 400 degrees F.
  • Now, grab your zucchini rounds and toss them in olive oil. This is whats going to allow your delicious seasoning to stick to the zucchini.
  • Next, get working on your parmesan zucchini seasoning. Mix together the panko, parmesan cheese, and spices and set this mixture aside for a minute.
  • Place your zucchini slices in an even layer in the air fryer tray. Its super important that theyre not overlapping. Otherwise, the air wont be able to properly circulate and your zucchini chips wont achieve that perfect crispy texture.*You may need to work in batches depending on the size of your air fryer basket.
  • Next, top the slices with the panko parmesan mixture. Dont use all the mixture though, youll need some for the other sides of the zucchini! Place your crisper tray in the preheated air fryer for 6 minutes.
  • After 6 minutes, flip the zucchini over and top the second side with the parmesan topping. Place the tray back into the air fryer for 6 more minutes.

    I love zucchini and buy it in bulk every summer, but sometimes I get overzealous and they wilt before I get to them.

    On average, raw zucchini will survive about 4 to 5 days in the refrigerator.

    If you’re looking to use it later than that, freeze it! But…how?

    Slice your zucchinis as you wish, whether in spears, coins, or diced, and boil them for about 2 minutes.

    After that, immediately plunge the zucchini into an ice bath to stop the cooking.

    Sealed in an air-tight container, zucchini can last for about a year in the freezer.

    When freezing, I like to put my zucchini into individually portioned containers so I can use one or two for a meal instead of thawing and refreezing an entire container.

    How To Cut Zucchini For Roasting

    When it comes to cutting zucchini to roast in the air fryer, there are a few important tips to keep in mind. First, you need to make sure that your zucchini wedges fit in your air fryer. Air fryers come in many different shapes and sizes. So in my case, I make my zucchini wedges about 3 long. That works perfectly and also serves up well on the plate. The second thing to keep in mind is that the size of your zucchini wedges will impact cook time. If they are super skinny they will cook faster than if they are larger. So when considering cook times, keep this in mind. If this is your first time roasting zucchini in the air fryer, you may want to check on your roasted vegetables after 7 or 8 minutes.

    What To Serve Them With

    You can eat air fryer zucchini fries on their own as a snack. They pair great with dipping sauces like our lemon aoili, or keto tzatziki sauce. If you want something spicy you can give our peri peri sauce a try!

  • Preheat the Air Fryer: Before beginning this recipe, make sure to preheat your air fryer to 400 degrees Fahrenheit.
  • Prep the Zucchini: Cut your zucchini across the middle and then into lengthwise quarters. Depending on the diameter of the zucchini youre using, you will have to cut the quarters into smaller pieces.
  • Mix Seasonings and Coat Zucchini: Spray zucchini with oil or toss to coat, Combine spices in a small bowl and season sliced zucchini with seasoning mixture.
  • Air Fry: Place the slices of zucchini into your air fryer and cook for 8 to 10 minutes, or until the zucchini has browned.
  • Season and serve: Squeeze some lemon juice on top of the zucchini after removing it from the air fryer. Serve it fresh and hot.
  • How To Make Air Fryer Zucchini

    1. Preheat the air fryer to 375° F.

    2. Slice the zucchini. Trim the ends of the zucchini and slice in half lengthwise, then in half again to make spears.

    3. Season the zucchini. In a small bowl, combine the paprika, garlic powder, onion powder, salt, and pepper.

    Lightly spritz the zucchini spears with olive oil spray and evenly dust the seasoning mixture over the zucchini. Sprinkle with parmesan cheese and place in a single layer in the air fryer basket.

    4. Cook the zucchini. Air fry for 6-8 minutes, until the zucchini and parmesan cheese begin to turn golden brown.

    PRO-TIP: make sure you leave room in the basket between each piece of zucchini so it cooks just right and gets a good crisp.

    If they are too close together, they will steam up and wont get crispy.

    To avoid the parmesan cheese sticking to the basket, line it with air fryer parchment paper.

    Roasted Zucchini and Mushroom Recipe in Air Fryer

    Transfer the zucchini to the basket of your air fryer. Toss it around a bit to get it into a single layer, or as much of a single layer as you can.

    Slide the basket into the fryer. Cook for 5 minutes. No need to toss them or anything during this time. Let them be!

    After 5 minutes give them a peek. They will likely need a bit more time. Toss the basket a bit and cook them for another 2-3 minutes, until they look like this:

    Transfer the zucchini from the basket of the air fryer to a serving plate. Eat!

    Reheating Air Fryer Zucchini

    I dont recommend reheating leftover zucchini in the microwave, because itll turn them into mush!

    For the best results reheating your zucchini, either put it back in the air fryer or oven at400°F and bake for about 5 minutes or until reheated. Make sure to space the zucchini out evenly so they dont become mushy when reheating!

    Instuctions To Make Air Fryer Zucchini Fries

    Rinse the zucchini nicely. Remove the top and tail end. Cut them into fingers. I cut them as I cut my potato wedges, i.e. cut the zucchini into halves horizontally. Then cut each half vertically into wedges.

    Prepare the mixture of refined flour and cornstarch adding seasonings, salt, and pepper. Add milk to make a batter of flowing consistency, not thicker than that. We need only to moist enough to hold the breadcrumbs. And to make the fries crisp this will be just a substitute for eggwash used for coating.

    Also on another plate take bread crumbs seasoned with spices and a pinch of salt.

    Takeout a piece, dip it into the batter. And roll them in the seasoned bread crumbs. Repeat the process for double coating. However, I have done single layer coating here.

    In the meantime, preheat the air fryer at 400 f for 4 5 minutes. Then grease the basket with avocado oil . Place the coated pieces and spray a little oil from the top. Now place the basket back into the air fryer and set it at 360 F or 180 C for 10 minutes. Flip them carefully in the midways . Then increase the temperature to 400 F or 200C for rest 5 minutes or till you get checking at 2 minutes intervals. Remove and serve immediately with any dip of choice.

    • Preheat the oven to 225º F. Line a baking sheet with parchment paper and set aside.

Youll want to stir them every few minutes to get them nice and evenly roasted. Air fryer temps can vary so you can always take them out a little early or roast them for another minute or two to you liking. You want the zucchini and peppers to have just a little snap when pierced with a fork.

  • Heat the air fryer. Set the air fryer to 350 degrees F.
  • Cut the chips. Cut one small zucchini into 1/8-inch thick rounds using a Japanese mandolin.
  • Use salt to draw out moisture. Transfer to a small bowl and toss with 1/4 teaspoon kosher salt. Allow the zucchini to sit for 5 minutes for the salt to draw out moisture.

    Cooking zucchini in an air fryer couldnt be easier. It only takes minutes. It can be cooked with just olive and seasonings, blended and roasted with other vegetables, or breaded and fried.

    I did have a couple of mishaps on my first two attempts at air frying zucchini. The first was when I tried to make paper thin chips, similar to potato chips. The chips looked so delicate and I had high hopes that they would crunchy, thin snacks. As soon as I locked the bucket into place, I heard what sounded like butterfly wings flapping. I opened the air fryer and saw the chips drop. They had, in fact, been flying around from the air circulating. Many had dropped behind the crisper plate and were charred on the bottom of the bucket. Super thin zucchini chips are just not heavy enough for my air fryer.

    The next mishap was when I attempted a Keto and Paleo friendly recipe using almond flour as the breading. Now, I know there are plenty of successful recipes where almond flour makes a good breading. For some reason, mine just clumped and never crisped up. Perhaps there is just too much moisture in either the zucchini or my almond flour.
