How to Cook a Baked Potato in an Air Fryer

  • Use russet, Idaho, or sweet potatoes. These have a thicker skin and a light, mealy texture thanks to their high-starch content.
  • Use similarly sized potatoes to ensure they’re done at the same time.
  • Rely on the fork test to determine whether they’re done. Cook times can vary significantly based on the air fryer model, as well as the size and number of potatoes.
  • Use a cooking oil with a high smoke point, like olive oil, avocado oil, or canola oil. Low-smoke-point oils like coconut oil may burn.
  • Don’t overcrowd the basket. Leaving some room between the potatoes allows the hot air to cook them evenly on all sides. A standard 7-quart capacity air fryer will fit a maximum of four potatoes.
  • If you’re using especially big potatoes , or air frying more than four potatoes in a larger capacity air fryer, you may need to add up to 10-15 minutes to the cooking time.

How To Make Air Fryer Twice Baked Potatoes

Wash and scrub each potato, then pat dry with a paper towel. Using a fork, pierce each potato about 10 to 12 times. Place the potatoes in the air fryer basket and gently brush with olive oil to coat the outer skin of the potato. Then sprinkle with salt and pepper. Return the basket to the air fryer and air fry at 400° Fahrenheit for 40 to 45 minutes.

Once the potatoes are done cooking, place them on a cutting board and cut each potato lengthwise in half. Use a large spoon or portion scoop, and gently remove the baked potato filling out of each potato half. Leave about a quarter of an inch of the potato in the potato skin.

Transfer the potato filling to a medium bowl and use a hand mixer, or large fork, and mix together until they are like mashed potato. Then, add in the sour cream, butter, and shredded cheese. Stir together until they are well mixed.

Scoop the potato mixture back into the potato skins until each one is filled. Return filled potatoes to the air fryer basket without stacking or overlapping. Air fryer again at 400° Fahrenheit for about 5 minutes. Cook times may vary depending on the air fryer. Five minutes is usually the perfect amount of time for the cheese to melt.

Even after weve fluffed the insides of the potatoes , there will undoubtedly still be some on the inside of the skins. I like to just cut them with a knife, dip in sour cream or even something like blue cheese dressing, and enjoy.
