I use russet potatoes in this recipe. They are the classic brown-skinned potatoes with firm, white flesh. The potatoes’ nutrient-dense skin is thick, making them perfect for getting those crispy potato skins in the air fryer.

Ive heard of people trying air fryer sweet potatoes, red potatoes, or Yukon gold potatoes as well, but Id say russet potatoes are the best choice for cooking this way.

Potato skins contain potassium, vitamin C, calcium, and good carbohydrates like fiber. Plus, a baked potato is gluten-free.

When buying potatoes, look for firm potatoes with as few blemishes as possible. Bruises, cuts, soft ends, wrinkles — and those spouts — are all signs the potato is past its prime.

Whilst you could use any potatoes for this air fryer jacket potato recipe, making it great for a budget friendly meal where you use whatever you have, certain potatoes will give you the perfect crispy potato.

We find that King Edwards, Russets and Desiree potatoes are the best. Firstly, their skin doesn’t hold moisture very well, and Russet skin is nice and thick, so they get nice and crispy.

Also, these variety of potatoes have a higher starch content, which means that they get nice and soft and fluffy on the inside, especially when they are cooked low and slow like this.

How To Cook Potatoes In The Air Fryer

Just follow these simple steps for perfect air fryer potatoes every time! The complete air fryer baked potato recipe is in the recipe card below.

PREHEAT YOUR AIR FRYER: Preheat your air fryer to 400 degrees F. Preheating your air fryer ensures that your potatoes will cook evenly.

PREP THE POTATOES: First, scrub the potatoes well and pat them dry with a kitchen towel. Then, poke them a few times with a fork to create small holes across their surface. This will prevent them from exploding in the air fryer.

SEASON THE POTATOES: Next, rub them with olive or avocado oil and sprinkle them with kosher salt .

COOK THE POTATOES: Transfer the potatoes to the basket of an air fryer and cook at 400 degrees F. Youll want to cook until the outside of the potatoes are crispy and the insides are easily pierced by a fork. This should take about 30-40 minutes, depending on the size of your potatoes.

Preparing Your Potato For The Air Fryer:

While one of the reasons that I love cooking baked potatoes is because they are super simple and easy, I also love cooking them because the prep time is minimal. Like, mere minutes minimal.

Before I do anything, I always start by scrubbing off and washing the potatoes. I’m a huge fan of eating the potato skins, so having them clean is a must! If you don’t prefer to eat the skins, your next step would be to peel those skins off.

After that potato is sparkly clean, poke some holes in it so that the heat and air can escape. I love to run olive oil all over the outside as well and then cover with my favorite spices.

  • 4 medium russet potatoes, scrubbed
  • 1 tablespoon olive oil, or as needed
  • 1½ teaspoons salt
  • 1½ teaspoons ground black pepper
  • 1 teaspoon onion powder

    Preheat an air fryer to 400 degrees F according to manufacturer’s instructions for 3 minutes.

    Place potatoes on a plate and use your hands to lightly cover them all with olive oil. Sprinkle with salt, pepper, and onion powder.

    Cook in the preheated air fryer for 30 minutes, flipping over with tongs halfway through cooking. Let cool for a few minutes before serving.

We just added some butter and sour cream when they came out of the air fryer. Just one comment: the seasoning may be a bit heavy for some folks, so just use your best judgment on whats right for you.   • I highly recommend using Russet Potatoes when making baked potatoes. They are larger in size, they have a more plain flavor which lends well to all the toppings, and the inside of a russet potato gets really soft while baking which is ideal for baked potatoes.
  • I have never used anything other than a russet potato when making baked potatoes. There are ‘jumbo russet potatoes’ at the store but more than likely they are too large to fit into an air fryer basket. Stick with the regular sized russet potatoes or sometimes also called baking potatoes.
