Sriracha Mayonnaise. This has spicy flavor along with a creamy, slightly tangy mayo.

How To Prepare Potato Wedges

Cut potatoes into wedges. I like to use large potatoes, and cut them length-ways to get good long wedges. I normally get around 6-8 wedges per potato .

The key to getting potatoes really crisp in the air fryer is to make sure that they are as dry as you can get them before you add any oil.

If there is moisture left on the surface of the potato once you have cut it then the browning/crisping process will be delayed until it has dried.

I usually pat the cut potato wedges dry with a paper towel before placing them in the air fryer.

Similarly, the amount of oil that you use will affect how crisp your wedges get in the air fryer. A quick spray keeps them healthier, but they may not be quite as crisp as they could be.

You can store your leftover sweet potato wedges in an airtight container in the refrigerator for up to 3 days. The best way to reheat them is to air fry them once again, so that they retain their crunch factor.

To freeze, allow them to completely cool. Then place in a freezer bag, You can store for up to 3 months! To reheat, place back in the air fryer for 6-7 at 350°F, Turning them over at the half way point of 3ish minutes.

Which Variety Of Potato Do I Choose

Choosing the correct variety of potato is the most important step in this recipe.The varieties that work well include the following.

  • Royal Dutch cream
  • Royal blue / Purple

Depending on where you live, you will find one vareity or other.) I have tried with Russet,King edward,Dutch cream,Royal blue and all of them were good .The best result was with Russet and Kind edward potatoes.

Best Potatoes To Use For Wedges

Yukon golds are one of my favorite types of potatoes to use. They are the perfect size for potato wedges and they cook great in the air fryer. They are small and great for one or two servings. Their skin is yellow instead of white. Russets will also work for this but since they are a larger potato, they might take longer to cook. If you are using russet potatoes check them to see if they are still cooked at the time mentioned below in the recipe. If they are not done you will need to cook them longer.

Other Variations To Try

This simple garlic Parmesan with smoked paprika blend is my go-to. Its so easy and so good!

But if you want to switch up your flavors, you could try using Old Bay, Italian seasoning, cumin, lemon pepper, or anything else that sounds tasty.

Dont have russet potatoes on hand? Yukon gold or red potatoes will work just as well for this recipe!

Want to really up the crispiness? Try sprinkling a little cornstarch over the wedges before placing them in the air fryer. This will give the potatoes a very thin crust that will make each bite oh-so-crunchy.

In the mood for some extra cheesy goodness? Throw on even more Parmesan or feel free to swap it out for any other variety of shredded cheese you like!

Cut Potatoes Into Wedges

When it comes to making things like fries, air fryer baked potatoes, and hash browns, the starchy russet potato is king. But for dishes like potato wedges and roasted potatoes, I prefer a waxy option like Yukon gold potatoes. They get extra creamy inside while still crisping up on the outside.

When it comes to cutting potato wedges, as you can see in the photo above, I like to simply slice the potato in half lengthwise before making two slices at a 45º angle into each half. I recommend choosing potatoes that are similar in size for even cooking, especially when air frying.

What Goes With Air Fryer Potato Wedges

Potato wedges make a great snack on their own, but they also taste great as a side with anything breaded like German Schnitzel, breaded fish, and Air Fryer fried chicken or with a burger.

If you want to dip them, ketchup or sour cream are perfect but Tartar sauce tastes great, too.

The potato wedges are seasoned with a combination of herbs and spices that gives them an amazing flavor. They taste absolutely delicious! The spices and herbs I used in this potato wedges seasoning are paprika, parsley, dried thyme, garlic powder, onion granules, black pepper, and salt.

I also just sometimes use my homemade potato seasoning for making potatoes wedges. You can use other seasonings like Italian seasoning, and vegetable seasoning.

Seasoning potato wedges before air frying them is easy and quick. After cutting the potatoes into wedges and soaking them, pat them dry with paper towels, add the potatoes, seasoning, and oil into a bowl and mix till well combined and the potatoes are evenly coated in the seasoning.

How Long Should You Soak Potatoes Before Air Frying

The minimum time to soak the potatoes is one hour.

As soon as they are soaked, the water tends to become opaque: this phenomenon is explained by the release of starch from the potatoes.

After rinsing them several times and soaking again, the water in the potatoes should appear clear: this means that most of the starch has been released from the potatoes.

Tips For The Best Air Fryer Seasoned Potato Wedges

Follow these tips to make the best air fryer jojos.

Use medium sized potatoes.

Cut your potato wedges into equal sized pieces. This will help them cook evenly.

Soak the wedges in ice water, if you arent cooking the potatoes right away after you cut them up.

Test your potatoes for doneness. Use a fork to poke one to determine if theyre cooked all the way through.

Toss well with cheese and parsley before serving.

Which Potato Is Best For Wedges

Russet potatoes work best for wedges. They cook faster and crisp up better than other potatoes. Organic is a good choice because potatoes are on the dirty dozen list for produce highest in pesticide residue.

Yellow, Yukon Gold, Red, and White potatoes work too but the result will not be as crispy, the interior texture will be waxier, and they will take a few minutes longer to cook. But they will still be tasty!

How To Cut Potato Wedges

To cut a potato into wedges, slice the potato in half lengthwise. Place the cut side of the potato onto the cutting board and cut it in half again to create quarters. Repeat with the other half. Now, position each potato quarter with the cut side up and cut down the center of each quarter to create a wedge. Repeat with the other quarters until the entire potato is cut into wedges.

How To Make Potato Wedges

Seasoned potato wedges are placed in the basket of an air fryer and cooked for 10 minutes. The wedges are flipped with tongs and cooked for an additional five minutes, to ensure maximum crispiness.

This recipe doesn’t require pre-soaking the potato wedges before air frying. However, if you have time to soak the potatoes in cold water for about 30 minutes before seasoning and “frying,” the recipe might yield even crispier results.

Why Are My Air Fryer Potatoes Not Crispy

There are a few factors that can cause this. The type of potato used. Waxy potatoes take longer to cook so you probably havent cooked long enough. Not soaking the potatoes can also cause this. Another factor is not using oil. Most importantly, you could be using the wrong type of potatoes. For best results use Russets or Yukon gold for crispy potato wedges.

Best Potatoes For Wedges

Have you tried russets baked potatoes? If you have, you get why my personal first choice for baked potatoes are usually Russets. They always come out well baked with crispy edges and fluffy soft insides.

They also cook faster than waxy potatoes like red potatoes and yellow potatoes which I have also used to make air fryer potatoes. Other alternatives Ive used besides the red potatoes and yellow potatoes are Yukon gold potatoes. If you want really crispy potatoes Id suggest either Russets or Yukon gold.

What Are The Best Air Fryers

Ive had 3 or 4 different air fryers or the past 5 years and each one of them has worked very well with the air fryer recipes on this site. If you want to be able to cook more food for your family at once then get an air fryer with a large basket such as 5.3 quarts. Look for ones that say nonstick on them and has multiple program settings.

Air fryer temperature settings vary according to brand and model. If your air fryer does not have the exact temperature setting called for in the recipe, consult your manual for suggested temperature settings.

Want To Know The Secret To Crispy Potato Wedges

Soak your potatoes! Soaking the cut potatoes in cold water makes them crispier as it removes excess potato starch. This leads the air fryer potato wedges to become beyond crispy.

Just make sure to pat dry the potatoes before you season them. If theyre still wet, the potatoes will steam instead of crisp up.

How Do You Cut Potatoes Into Wedges

Slice the potato in half lengthwise with a Chefs knife. Then place the cut side down onto the cutting board and slice it in half again to make quarters.Place each potato quarter cut side up, then slice down the center of the quarter to create wedges. The number of wedges you get out depends on the size of the potato. The thick end should be about a 0.5 inches thick.

More Seasoning Options For Potato Wedges

If you wanted to ditch the ranch seasoning, Im always a sucker for garlic parmesan. Check out my oven roasted carrot sticks or air fryer carrot fries for a simple crushed garlic and grated parmesan seasoning. For a little taste of the southeast, you could use my Cajun fries seasoning, or you could take things international with my air fried Mexican potatoes or Greek potatoes.
